The Patagonian Cuisine
The gastronomic culture in Argentina has been influenced by immigration (especially from Italy and Spain), with the touch of the old Pampa’s tradition. The indigenous heritage has also its footprint, but more in the North of the country than in anywhere else.
The most popular treats include the “Asado” (BBQ) with its different meat cuts, “Empanadas” (small pies) with different fillings, “Dulce de Leche” (local variation of caramel), “Alfajores” (a delicious combination of cookies and dulce de leche), pizza and pasta, among many other options, depending on which region of the country we refer to.
The‘Mate’, our local infusion, symbolizes the social union of the Argentine people, whereas the red wine (particularly the Malbec) attracts thousands of visitors all over the world.
The region of Patagonia, offers the additional value of mixing all these elements in a unique atmosphere, such as eating a yummy lunch in an Estancia surrounded by hidden Glaciers.
1. Bariloche & Lakes District
The “alps” of South America, have managed to blend European (particularly German) dishes with regional ones. Classic recipes were converted into new experiences by adding fine fruits, seeds, nuts, mushrooms or different sorts of meats.
Trout, salmon, deer, wild boar, lamb, etc., can be tasted in different ways, for example as stew or smoked, or grilled (red meat) for several hours over an open fire, or “curanto”style (particular way of cooking with stones in a hole in the ground) or accompanied by a range of different sauces.
Vegetarian alternatives are also available for those who love it, and it is highly recommended to try some of the local fruits, especially the berries!

2. El Calafate & El Chaltén
Particularly in this region, the Patagonian lamb, the trout and the salmon can be tasted in different ways, for example as stew or smoked, grilled or accompanied by a range of sauces. Vegetarian alternatives are also available for those who love it, and it is highly recommended not to miss to try the typical “Calafate” berry, used especially for jams.

3. Ushuaia & Tierra del Fuego
The gastronomy in Ushuaia is a combination of excellent seafood and traditional Andean Patagonian dishes.
One of the musts is the traditional “centolla fueguina” (spider crab) caught straight from the Beagle Channel, or Merluza Negra (black hake). Both plates can be enjoyed either in restaurants with a beautiful view, or in a private environment with an experienced local Chef, discovering the secrets and stories of the local cuisine.
The “cordero fueguino” – a type of lamb exclusively bred in Tierra del Fuego – is also a typical element of the local gastronomy. The conditions of the ground, where they graze, have a low-fat effect on the animals, and hence, the flavor of the meat is sublime.

4. Puerto Madryn & Peninsula Valdes
